The yolk is the rich golden centre of your egg. It is this part that contains the most protein. Now you know how to cook the whole egg it is time to investigate what you can do with this golden nugget of goodness. I gurantee you will find a recipe that uses egg whites, so what are you supposed to do with the spare yolk.

Many recipes using yolks will use more than one, so you will need to store the extra whites until you can use them. Egg whites keep very well in the freezer. If possible freeze them individually so that you know how many you have. Frozen egg yolks will dry out quickly and go solid. This means that you realistically need to use them within a week of going in the freezer. Make certain they are properly defrosted before you use them as they wont mix well otherwise.

Ideas for using up a single spare yolk

If possible plan what you will use your yolk for before you generate the spare. A single yolk will stay fresh for 2 - 3 days in an airtight container. Leave it for much longer than this and it will start to go mouldy. Adding a spare yolk to any whole egg recipe will create a richer meal. So if there is a spare around and you are making;

  • a quiche,
  • an omelette,
  • scrambled egg
  • french toast, or eggy bread as we used to call it
  • any batter based dish, including yorkshire puds and pancakes

just add the yolk to the rest of the eggy mix and save the waste. or plan one of the following meals to use your yolk a bit more imaginatively.

Recipes that call for the addition of an extra egg yolk

  • Extra rich pastry - This is a sweet pastry that tastes almost like shortbread. It is great for fruit pies and mince pies at Christmas.
  • Baked Raspberry Cheesecake - A rich dessert using fresh or frozen raspberries, quick to make and uses up an extra egg yolk in the process. Great for impressing friends at a dinner party
  • Spaghetti carbonara - This recipes normally calls for 2 whole eggs. However it is delicious made with an extra yolk or alternatively substitite all the eggs for yolks if you have them to hand.
  • Clafoutis - Cherry batter pudding - A delicious dessert that slides down easily after a filling meal. Make the batter richer by using an additional egg yolk if you have one.
  • Louise's Lemon Meringue Pie - A recipe for lemon meringue pie that originated from South Africa. The lemon filling has a thicker creamier texture than the English curd version as it contains condensed milk 3 eggs and an extra yolk if you use extra rich shortcrust pastry.

Recipes using more than 1 egg yolk

  • 2 Yolks and a whole egg - Pasteis de Nata or Portugese custard tarts, a puff pastry case filled with vanilla custard. A great way to use up a couple of egg yolks and can easily be made gluten free as well.
  • 3 Yolks - This recipe for Tiramisu has evolved over the years to the perfection we like so much that Simon has taken over the production of it, a sumptious thick version of coffee trifle, yummy!
  • 4 yolks - Extra rich vanilla Ice-cream, in ice cream the more yolks you use the richer the product you will produce. Ice-cream is really a frozen custard, it's just that the custard has extra cream in it. Heaven.
  • 4 yolks - Lemon curd, this recipe asks for 3 eggs plus 1 egg yolk, it can be made using all egg yolks for a richer version.
