tomatosauceThis recipe has evolved from a recipe for Italian Chicken. We still make the original Italian chicken  however we now use our own version of the sauce. Using fresh tomatoes in season is a great way of using up a glut. This tomato sauce has become so much of a staple to us it is a store cupboard item in the limited space available in our freezer, so it must be good. Even Simon can make it!

Recipe makes approx. 500ml of sauce

Ingredients

  • 1 tin of plum tomatoes or 500g of fresh toms skinned and chopped
  • 500ml vegetable or chicken stock
  • 1 small or ½ a large onion chopped finely
  • 50g butter or a splash of oil for cooking
  • 1 clove garlic crushed - optional
  • 2 tbsp Tomato puree
  • ½ tsp sugar
  • Salt and Pepper to taste

You will also need

  • a saucepan
  • a hand blender if you want a smooth sauce

Method

  1. Heat some oil in a pan until it is smoking. Add the onions then turn the heat down and let the onions soften
  2. Add the garlic, tomatoes, tomato puree and stock then bring back to a simmer
  3. Reduce the heat and cook for 10 - 15 mins till the tomatoes are cooked through and the sauce has started to thicken
  4. Adjust the seasoning to taste, adding sugar to taste at the same time
  5. For a chunky sauce you are now ready to go, if you want a smoother version blitz the sauce in a blender then re-heat.

Serving suggestions and variations

  • Great served with Sausages, grilled or roasted meats, white fish and breaded fish
  • Remember herbs add depth of flavour to your food. Add some chilli, rosemary, basil or thyme to give even more flavour
  • Add a little Tabasco, Harrissa paste or chilli sauce if you want a bit of bite.
  • This sauce makes a very good addition to pasta either on its own or stir in anything you want to add, meat balls, prawns, mushrooms or our med veg.
  • Add a splash of cream or crème fraiche to make it richer
  • Can be doubled in quantity for spares for another meal or a portion in the freezer
  • If you like to make your own pizza then look no further for a tomato sauce base!
  • This makes an excellent pasta sauce served on it's own with your favourite pasta or spiralised vegetables for a light bite, or you could try adding;
    • cooked prawns,
    • mixed seafood,
    • cooked meatballs,
    • sliced mushrooms fried off in butter with a litle extra garlic,
    • leftover cooked chicken from a roast dinner,
